Summer Pasta Salad

Take all of this:



and put it in a bowl and pour this dressing over it:

3T of Rice Vinegar
1/2 T Apple Cider Vinegar
3T Sugar (you can use less if you like)
1/2 tsp salt
1/4 c oil (I use olive oil)

It is yummy! I had it at a friends house a couple of weeks ago. I got the recipe from her and I made this for dinner on Friday Night. And then I ate it for lunch on Saturday and finished the last bowl for breakfast this morning.

Here is what you do:

Cook the bowtie pasta. Make the dressing by whisking the above ingredients together. (I actually double the recipe) Pour half of the dressing over the pasta, cover and put it in the fridge to chill for at least 2 hours. When you are ready to eat it add as much as you like of the following ingredients:

craisins - I use half of a cup, but I am going to substitute fresh strawberries the next time I make it
green onions - I have actually never had the salad with the green onions because I always forget them
diced cooked chicken - I use 2 breasts worth if I am using it as the main dish and I leave it out when it is a side
baby spinach - a half of a bag works well, but the more the better in my opinion
cashews - I use one cup
sunflower seeds - I use about 1/3 of a cup

I'm not a big fan of pasta salads but this one really sounds yummy. Thanks so much for sharing -- can't believe it's time to start getting the summer recipes out again. Soon it'll be time for the tailgating ones!

I like making dishes like this in the summer because you can serve it hot or cold!

That is one of my FAVES but I've never had it with the spinach. I've had it with broccoli, zucchini, match stick carrots, mushrooms and red onion. I will have to give this version a try!!!
