Works for Me Wednesday: Dinner in Minutes

This time of year things get a little crazy. And when things get crazy the first thing I tend to forget about is dinner. And this is also the time of year that I don't want to throw the money or calories away on eating out. So I try to have some quick meals that require little or NO work available for those days when I just don't remember dinner early enough to thaw out chicken!

One of my favorite (like I could eat it everyday and if I was stranded on an island and could only choose one meal it would be this one because it is that good) is Tortilla soup. Now I have a fancy recipe that calls for me to thaw out chicken, but I also have a recipe that comes COMPLETELY from cans. And it is GOOD!

What you need:

1 can chicken broth (14 oz)
2 cans cooked chicken breast (12.5 oz) (I buy a 6 pack of canned chicken every time I set foot in Costco. It is perfect for soup and for chicken salad!)
1 can kidney beans (15 oz)
1 can corn (15.25 oz)
1 can diced tomatoes (14.5 oz)
1 can diced green chiles (4oz)
1 can Enchilada Sauce - I prefer red (10 oz)

Open all of the cans, drain the chicken, corn and beans. Then pour everything else into a pot, stir and let simmer on low until warm.

Serve alone, or with tortilla chips, cheese, avacado, and sour cream on top.

It makes enough for my family of 5 to have our fill for dinner and for me and hubby to each have a bowl for lunch the next day.

The best part is my kids can make this all by themselves!! And that works for me!

Tortilla soup is one of my favorite things. I am on a permanent quest for the perfect recipe. Indeed, I have tried many, many recipes - and a lot of them are fairly complicated and time-consuming to make! Thanks for this!

(At the moment, I spend so much time baking that dinner is pretty minimalistic . . . we had lentil soup last night.)

I have never tried it with beef, but my friend makes a killer taco soup with ground beef in it. I will have to get the recipe!
